Description

Air fryer zucchini parmesan is a light, crispy, and cheesy veggie side you can whip up in 15 minutes. No breading needed—just fresh zucchini, parmesan, and a few pantry spices.


Ingredients

Scale
  • 2 medium zucchinis

  • 1/2 cup freshly grated parmesan

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

  • Olive oil spray


Instructions

 

  1. Slice zucchini into 1/4-inch rounds.

  2. Lay slices on a paper towel, sprinkle with salt, and rest 10–15 minutes.

  3. Blot dry to remove moisture.

  4. Preheat air fryer to 400°F.

  5. Spray zucchini lightly with olive oil and season with garlic powder.

  6. Press slices into grated parmesan on one side.

  7. Place in air fryer basket, cheese-side up.

  8. Air fry 8–10 minutes until golden and crisp.

Notes

Use freshly grated parmesan for best results.

Do not overcrowd the basket—cook in batches if needed.

Serve immediately for maximum crispiness.
